ORIGIN: Wairarapa CLIMATIC CONDITIONS: A windy spring and wet spell over the New Year was followed by a hot, dry summer. DATE OF HARVEST: 30th March - 16th April 2015 HARVEST & VINIFICATION: Hand-picked and careful selection of grapes. 100% de-stemmed, cold-maceration and fermentation in stainless steel vats and left on "skins" for 3 weeks. Aged in used French oak barriques for 18 months. DATE OF BOTTLING: June 2016 ALC: 14.0% VOL TASTING NOTES: Richly coloured with a refined bouquet offering layers of brambly fruits of the forest and lively spice. An inviting a velvety textured entrance of ripe brambly berries and dark cherries with notes of layered aromatic spice and a suggestion of forest floor leading to a savoury core with subtle tannins. Creating a lingering lasting impression. DRINKING TEMPERATURE: 16-18 ºC CELLARING: 4-7 years |
