VARIETY: Assemblage of Syrah, Merlot and Cabernet Sauvignon ORIGIN: Wairarapa CLIMATIC CONDITIONS: Cool spring and summer resulting in a slow ripening of the grapes. The harvest started three weeks later than most years. Yet beautiful sunshine during April ensured perfect ripening conditions.
DATE OF HARVEST: 27th April & 7th May 2012 HARVEST & VINIFICATION: Hand-picked and 100 % de-stemmed. Fermentation in stainless steel vats and maceration for 3 weeks. Aged in 35% new and 65% used French Oak barriques for 4 years. DATE OF BOTTLING: 15th June 2016 ALC: 14.0% VOL
TASTING NOTES: Lovely lifted array of toasted Christmas spices, intriguing notes of Ghana chocolate, freshly cut cigar, forest floor under-growth and a glimmer of summer cherries. Rich sweet dark fruit on the entrance that leads to a silky texture of pure dark chocolate and spice, complex layers of fresh cigar's and cedar, with notes of open fires and savoury earthy tannins. An intriguing complex wine that has a lingering touch on the palate. A fantastic food wine that would be the perfect accompaniment to charred beef and open fires.
