VARIETIES: 100% Pinot Noir ORIGIN: Wairarapa CLIMATIC CONDITIONS: A windy spring and wet spell over the New Year, was followed by a hot, dry summer.
DATE OF HARVEST: 31st March 2015 HARVEST & VINIFICATION: Hand-picked, de-stemmed and cold-macerated on skins for 5 hours then pressed. Fermentation in stainless steel tanks under influences of various yeasts and temperatures. Racking by gravity to keep maximum freshness of fermentation-CO2. DATE OF BOTTLING: 15th October 2015 ALC: 13.0% VOL
TASTING NOTES: The prettiest of peach colour reminescent of summer. Lifted aromas of freshly cut roses with an alluring mineral background that drwas you in. A beautifu; silky entrance leading to notes of white peaches and early seasons strawberries with a hint of spice offering a focused mineral core that lingers to a balanced dry finish. A classic European style dry Rosé.
