ORIGIN: Wairarapa CLIMATIC CONDITIONS: Cool spring and summer resulting in a slow ripening of the grapes. The harvest started three weeks later than most years. Yet beautiful sunshine during April ensured perfect ripening conditions. DATE OF HARVEST: 8th May 2012 HARVEST & VINIFICATION: Hand-picked and 100% de-stemmed. Fermentation in stainless steel vats and maceration for 3 weeks. Aged in 35 % new and 65% used French Oak barriques for 30 months. DATE OF BOTTLING: 17th December 2014 ALC: 13.0% VOL
TASTING NOTES: Deep dark with purple hues. Intense and full nose of dark fruits with a hint of liquorice, bacon and herbs. Ripe black fruit entrance of cherries and chocolate, with a touch of cracked black pepper and thyme with a vibrant acidity leading to a mineral full body with savoury firm tannins.
