CLIMATIC CONDITIONS:

Cool spring and summer resulting in a slow ripening of the grapes. The harvest started three weeks later than most years. Yet beautiful sunshine during April ensured perfect ripening conditions.

DATE OF HARVEST: 26. April - 3. May 2012

HARVEST & VINIFICATION:

Partially whole bunch pressed and maceration on skins. Fermentation in different bins under influences of various         yeasts and temperatures. Racking by gravity to keep maximum freshness of fermentation-CO2.

DATE OF BOTTLING: 25 October 2012

ALC: 13.5% VOL

 

2012 Sauvignon Blanc

TASTING NOTES:

Zesty citrus and star fruit nose with some lychee,
pineapple and gooseberry aromas. Then basil mint and fresh thyme. Medium bodied with some grapefruit and exotic fruit on the palate. Showing nice fruit-sweetness, very elegant, leading to a lively long-lasting finish.

 

DRINKING TEMPERATURE: 10 ºC

CELLARING: now to 5years
