Schubert Wines - 2008 Cabernet Sauvignon & Merlot

ORIGIN: Wairarapa CLIMATIC CONDITIONS: Mild spring leading to ideal conditions for fruit set in December. Summer was very hot and dry with some rain only towards the very end of autumn. DATE OF HARVEST: 23 - 27 April 2008 HARVEST & VINIFICATION: Hand-picked and 100 % de-stemmed. Fermentation in stainless steel vats and maceration for 3 weeks. Aged in 60% new and 40% used French Oak barriques for 48 months. DATE OF BOTTLING: 19 June 2012 ALC: 14.5% VOL TASTING NOTES: Dark Bordeaux red colour. Ripe nose of cassis with hints of chocolate, truffle and black olives as well as cinnamon and cloves. After a while also leather, a hint of barnyard with an edge of some gamy characters and a touch of vanilla. In the mouth boysenberries, blueberries and spice box; then ripe sweet blackcurrant followed by some herbal notes, leather and tobacco. Good concentration with a present but elegant tannin structure. Long lingering finish. DRINKING TEMPERATURE: 16-18 ºC CELLARING: 5-10 years CASES PRODUCED: 250 |
